So, I am often inspired by food flyer sales (LOL) and, this week, fresh cored pineapple is a great deal so, I'm looking for a recipe to use it in. Maybe turn it into a cupcake. I know there are lots of pina colada ones floating around but, hubby HATES coconut so, I'm looking for something that doesn't have it or, the taste of it isn't overpowering.
