Over the weekend I made two new Red Velvet cake recipes - one very late last night and taste tested this morning. Anyway, one vegetable oil based (recommended by FromScratchFM above) , that turned out well - nice moisture, not dense, great flavor. The second one was butter based, which turned out well too not quite as moist and slightly more dense than the oil based one. Then I added the simple syrup to the butter based one - 1/4 cup with vanilla - the moisture was just right. Now I have two very good recipes for two different purposes icon_smile.gif Thanks so much for all the simple syrup help - much appreciated icon_smile.gif
