Fondant + Frosting Question
Decorating By PersonalizedCupcakes Updated 29 Apr 2011 , 9:32am by cherrycola
I have always seen cakes that are covered with fondant using buttercream as the frosting underneath.
Will other frostings work with the fondant? I have a request for a cake using my "from scratch" dark chocolate frosting. But the design on the cake would look best using fondant on top. Will fondant work and stay put with chocolate frosting? Do I need to let the chocolate frosting sit out for a day or in the fridge and harden up a bit? Is there possibly too much moisture in a typical chocolate frosting for the fondant?
And what about other frostings like cream cheese frosting for a carrot cake?
Thank you in advance for your help!!!
I guess it depends on what exactly is in your chocolate frosting, and if it's a really loose, wet frosting. It shouldn't be a problem though, we have used cream cheese and chocolate BC under fondant without a problem. You can also use chocolate ganache under fondant. HTH!
I also agree with CakeMaster2009 on using chocolate ganache under the fondant. You can use bittersweet chocolate or a mixture of bittersweet/semi-sweet. Super yummy and will go well under fondant. Check out this video by InspiredbyMichelle
Thank you for letting me know. Actually it's a nice thick chocolate frosting. I'm so happy to know that I can use anything under fondant. I've just never heard anyone mention other frostings under fondant. I see/hear nothing or buttercream. This is great to know! Can't wait to start baking!!!!
Just a quick question re the cream cheese frosting. Is it ok to leave it out of the fridge overnight? I want to cover a carrot cake in cream cheese frosting and fondant over it but if I put it in the fridge the fondant will "sweat".
