My brother is having his daughter's birthday and christening the same day. His wife and her best friend (also a cake decorator) are making the birthday cake. It will be Yo Gabba Gabba themed, with figures etc. My brother asked me to make the baptism cake. He wants an ice cream cake. I have made those in the past, but they have been just personal, and I havent decorated them much.

I want my baptism cake to be as awesome as the birthday cake, so how do I achieve this with an ice cream cake? How can I decorate it without it melting before I finish?

Any suggestions/tips are welcome!

Use Rich's whipped topping to ice the ice cream cake. Work fast and when you see it look like it is melting, stop and put it in the freezer to harden up again. Take your time and just be careful! You will be fine! Good luck!

I usually make my ice cream cakes out of angel food cake...after it has cooled, I take the cake out of the middle and put in the flavor of the ice cream requested...then, I put it back in the freezer...take it back out and decorate it in either buttercream with a 1M decorator tip right before serving or I put whipped cream on it and stick it back in the freezer...it works...and it will look as good as the birthday cake.
