how long does fondant last?

I'm sure it's on here somewhere and i just missed it. Sorry. My daughter's bday is may 1 and her cake has a LOT of decorations that will be made out of fondant. I need to start on it asap since i have 3 kids and VERY little time during the day to work on it and no experience with fondant. I heard i could make them now and freeze them or refrigerate them but i just need to be sure. Also how long does an open package of Wilton fondant last before it goes bad?

Keep the open fondant packet well-sealed in a snap-lock bag just at room temperature. You can make fondant decorations/figurines well in advance, (I make mine sometimes up to a month beforehand, but they will keep longer) just store them at room temperature, in either a cardboard box or if in a plastic container then leave the lid OFF (you want them to dry out - an airtight environment can make any painted on details 'bleed' and cause parts like the heads & arms on figurines to sag) and preferably in the dark as some colours will fade. If you plan to make shapes/decorations that will be 'standing up' on the cake then mix some tylose or gum tragacanth powder into your fondant which helps it dry faster & makes it a lot stronger. Whatever you do, do not refrigerate your decorations, it will ruin them.

I've made them several weeks in advance & kept in Tupperware in our pantry. I have 3 week old fondant in the fridge right now!

I have had fondant decorations sitting in airtight containers for months and months. There isn't anything in fondant that spoils or goes rancid, so dried decorations can be made literally months ahead of time. You'll be fine to make them now for her May birthday.
