Well....attempted my first cake pops today. Watched a couple of youtube videos, including Bakerella's, and felt pretty confident icon_biggrin.gif .....well.....these little boogers are harder then they look icon_cry.gif ! Had some extra batter left from a cake I'm decorating tomorrow and thought I'd experiment. It made a single 8" round. It was WASC and I used store bought cream cheese icing. Made my "dough" and it looked just like the stuff in the videos I had watched so I was super excited. My friend and her 6 yr old little girl were helping me and they were excited too! So...we roll them up into little balls, melt the candy and use it to insert the sticks. We popped them in the fridge for 5 minutes then it was time to start dipping. The melted candies seemed to be the right consistency and we even added crisco (like in the video we watched) to thin it out and make it easier to work with. So first one in.....it starts falling off the stick into the candy....ugh! Saved it, but then it was like the chocolate was to thick...the extra wouldn't run off until the sprinkles were added. Ok....that was the first one, no big deal...try again! Next one dipped ok....same problem with extra not dripping off, even when tapped lightly on side of bowl. Put it in the styrofoam to dry and "plop" the stick went all the way through it and it falls to the foam board...ugh! Really?? We had these problems all throughout. Some didn't fall off the stick but they took on a wonky shape and were lopsided. What in the world happened? I wonder if I put to much icing in the mix. I put just enough to make it stick though.

Another thing.....man these things were sweet. I love sweet stuff and can usually handle anything that most other people say is way to sweet, but wow...after the candy coating and sprinkles.....talk about a sugar rush! icon_confused.gif

Just noticed this is in the recipe forum....it was supposed to go into the disaster forum. Geez, I'm having a bad night all around. I haven't even clicked in the recipe forum tonight...sigh. If a mod can move this it would be much appreciated icon_redface.gif

Well, I'm not the crazy one after all. I did post it in the disaster forum and just got a message it was moved here. Makes no sense to me but ok! Think I'm just gonna stop posting all together cuz my posts always get moved elsewhere and it never makes sense to me. icon_confused.gif

did you freeze or chill the dough first?

ok 5 minutes is not long enough.

I let them chill for a good hour, or i dip them frozen.

No ma'am, I did not. It makes sense though. I will try that next time! Any advice on making it less sweet??

Try just mixing it without any binder, best time is while the cake is still warm icon_smile.gif

motherofgrace - You mention mixing it without binder. Is binder the frosting? I'm an amateur at this. icon_smile.gif About to attempt my first cake pops. I already mixed the cake and frosting and it is currently chilling in the fridge. But I can certainly imagine that they will be really sweet, so I would like to try a less-sweet method next time. Assuming I am still up for a 'next time' after this round! icon_smile.gif

I'm so excited to give this a try! I've been watching videos and reading blogs.

Yes binder is frosting.
