how long will they stay in a ziploc bag in the fridge without going bad? freezer? if longer in the freezer are they ok in a ziploc bag without being individually wrapped? and do you need to leave the bag open in the fridge when defrosting?

I stored my sampling cakes in freezer-ziplocks. Some of them would be in the freezer for 3 weeks. I only baked once for every 9 samplings. I'd pull one piece of the cakes out of the freezer-ziplock and put it in another ziplock on the counter (so it could thaw while wrapped. if it thawed while unwrapped, it could dry out from being exposed to the air.) Took about 10 minutes to thaw (2x2.5x2" piece).

I've kept cakes in the freezer longer. Made a wrong flavor once and threw it in the freezer in case I needed it. Eventually, I needed the room more than a spare cake, so I thawed it, iced it and took it home for dinner. Tasted like a day-one cake!
