ok so I made a chocolate fudge cake and filled and covered it with whipped ganache. But then I let it chill in the refridgerator to set (my kitchen is pretty warm after baking 4 hours today!) Now I'm ready to cover it in fondant but the fondant wont stick! How do you get it to stick?

mist it with a little water. If you don't have a spray bottle, just dab a little water on with your hands or brush some on with a pastry brush. Doesn't take much.

You can also use a simple syrup, but you don't even need to get that fancy. Water works fine.

Yup, just spray it....or lightly brush water on it. it doesnt need to be soaked, just slightly damp.

water won't mess up the chocolate?

no just use a little bit to give the fondant something to stick to. I've covered lots of ganache cakes with fondant and it's the only way I do it. Just a small amount to cover the surface is all you need. Just make sure you don't leave any dry spots or you could get air bubbles.

I was going to try this next week too, so thanks for the tips. Would you need to spray the entire cake with water or just the top?

Sides as well as top. I usually dampen a paper towel and rub that all over. Saves drying the surrounding bench before putting the fondant on if you're spraying water around.
