Applying Fondant To Square Cakes In Panels

Ok, so after all these years of cake decorating I still struggle putting fondant on square cakes. I've watched Christopher Garrins cakes on Amazing Cakes and they often roll the fondant out and put it in the frig and let it get firm then they apply it to each side of the cake and trim it down, like panels. I have also seen other cake decorators on TV do this and the panels slide down the cake after some time elapses.

Has anyone had any experience with doing it this way, any advice or tips. I really want to try it because it gives such nice crisp corners. I guess the best thing is to practice on a cake for my family to see how it works before i try it for a customer.
Any advice or feedback is very welcome!

I love this method. I froze mine with stenciled damask design on it first. So easy to stencil flat.

I did my 50th birthday cake "gift box" using that method- and it worked great! icon_smile.gif

Ok, thank you for your reply. So I know it works, is there anything special I need to do to keep the panels from sliding down? Is this something I have to worry about?
