So I just finished baking last night - for really small wedding reception of 20 people. I just made a 6" and an 8" for a simple wedding cake... I just found out shes actually expecting 35 people now! The wedding is on Saturday - I certainly don't have time to make and freeze another tier - should I make cupcakes to try to compensate? Is there a secret of how to fix this fast that I'm not aware of? Shes a friend so this is her wedding present and I want it to look good!

You might go the kitchen cake route. At many weddings, the cake which is cut is not big enough to feed everyone, but there are sheet cakes (which are not put out for display, but are kept back in the kitchen - thus the term "kitchen cakes") that are also cut and served along with the main cake. Many times this is used as a cost-saving device (the idea is that the kitchen cakes don't need to be as fancy as the main one), but this is not necessarily the case. You can make your sheet cake as delicious and as fancy as the other cake, and you will be sure to have enough cake to go around without having to incorporate another tier into the cake you've already made. Actually, if you only need 15 extra servings, you could make another cake in the same shape as the original cakes (say another 8" round, if that's what you're using) with the same frosting/fondant but without so much decoration, but keep it separate from the cake that's being cut. That way, no one will know who's getting a slice from the cake that was actually cut for show and who's getting a slice from the extra cake. Does this help?

It already serves 36 if they don't freeze the top anniversary tier.

Marianna - Thats a great idea! Its in a restaurant so I don' t know if I have the room to hide any cakes though.

CWR- Do you think it will feed everyone? I thought I read that it will only feed like 20-25 people. We are not freezing the anniversary tier. They are pretty high tiers.

True, CWR, but most brides want to freeze the anniversary tier!

I agree with just making an additional 8" round kitchen cake. Better safe than sorry.

I would let them cut the top tier and offer them a anniversary cake next year at their 1 year anniversary. That way would yoy won't have to rush to get a cake done
