So I just dropped my full sheet cake flipping it out to cool. Luckily it fell on the nice clean table but is completely unusable for a cake. I want to make some cakeballs for a bakesale in a couple weeks for charity, so this would be good for that.

Am I better off to freeze the cake as is, then thaw, add icing and roll when I am ready, or should I make the cake balls and freeze them already rolled?

personally I cumble the cake up and freeze as is then take it out when I need it.

But I guess you could do it either way, you'd have to let the balls thaw some what before dipping or the chocolate might crack...had that happen to me a couple of times.

I am thinking it will take a lot less room in the freezer if I just freeze it as is too. Thanks.

i am also curious. its not so much as to baking the cake; but having the balls ready to coat when i have the time. Is it a good idea to: make cake, mix with icing, roll and freeze. Then a day before i'm ready to dip in chocolate remove from freezer and place in fridge.
