Cake Collapse! Help.

I just made two 10" chocolate cakes using the Cake Mix Doctor's Darn Good Chocolate Cake recipe. (Box devil's food cake mix, pudding, sour cream, eggs, oil, water.) I've made this recipe before with no problems.

This time, when I flipped the cakes out of the pan they literally sank right there in front of me . . . almost like deflating balloons. I'm confused and I don't want this to happen again. Does anyone have any ideas as to why this happened. Did I perhaps overmix the batter?

I think they were under baked. Just my opinion. I have that to happen , when i don,t let it bake long enough. Now , i check the very last minute, then leave 2-3 more minutes. That helps me alot. hth I check with a skewer or cake tester. I don,t just guess.

Yeah, that was my first thought, too....it wasn't quite done in the middle. I'm sorry!

Thanks! I think you both are correct and they were undercooked. That is strange because I tested them and thought they were done. I'm making this cake for the charity Icing Smiles (for a little girl turning 3 who has leukemia.) I want it to be just perfect. Of course this is the cake that gives me trouble! I feel so much pressure to make the cake memorable for this little girl.

Here I go to rebake two 10" rounds . . . ahhhhhhhhhh . . . .I hate cake wrecks icon_smile.gif
