I found this recipe and can't stop making them! They are so easy the kids could make them but then they eat them so whenever I want something sweet, I whip up a batch. I made them last Easter into tiny egg shapes and decorated for the church egg hunt. They will hold their shape well and won't get dry.
The Easiest Peanut Butter Cookies
1 cup peanut butter
1 cup sugar
1 egg
Mix well and bake 8-10 minutes at 350.
Optional: peanuts, chocolate chips, pecans, drizzle with melted Nutella or chocolate

I have been using that recipe for at least 10 years. It's great. The cookies are a little crispy though. If you want them to be a little softer and puff up a bit, add 1 teaspoon of baking powder. These are also gluten and dairy free.
Oh my goodness.....I have used this recipe for YEARS......and my family loves it!!!!!!!!! They are the best peanut butter cookies ever!!!!
You do have to be careful, because they will burn easy. I always use parchment paper.
These are the peanut butter cookies i grew up on!! my absolute favourite!
As one of the first things i ever baked, i can say from experience that they really do burn quickly, so keep an eye on them!
