Butter Or Vegtable Oil for Vanilla Cupcake Recipe

Hey Dolls,

I came across this Vanilla Cake Recipe from Buddy from the Cake Boss, I was wondering if I can use butter instead of Vegtable oil and All purpose flour instead of Cake flour?

Ingredients:
21/2 cups cake flour, plus more for flouring the cake pans
2 cups sugar, plus more for unmolding cake
3/4 cup vegetable oil
21/4 teaspoons baking powder
1 teaspoon pure vanilla extract
1/2 teaspoon fine sea salt
4 extra-large eggs, at room temperature
1 cup whole milk
Unsalted butter, for greasing two cake pans (about 2 tablespoons); nonstick
cooking spray or vegetable oil may be substituted

You can but the cake comes out quite different. It comes out as a very heavy pound cake.

As a general baking science rule, it's tricky to substitute a solid fat for a liquid fat, you will get different results. Oil is 100% fat, butter is only 80% so you will have to make adjustments in your amount if you want to get a similar texture. So, if recipe calls for 3/4 c oil, you would need to increase your butter by 20%. But you may or may not need to decrease your liquid by 20% (the milk) to compensate for the extra water in the butter. Make sense?

You would probably have better results using shortening over butter since it's 100% fat.
