Can I use royal icing to drizzle on choc. covered pretzels?

I am turning to all of you great candy makers for some help. I need to find a solution that allows me to drizzle something white onto chocolate covered pretzels. I need something that is peanut/tree nut free and also dairy free. With these restrictions, I cannot use the Wilton candy melts and most white chocolate contains dairy. I was thinking that I could use royal icing. If I could get some input, that would be great. My biggest concern is that the "grease" from the chocolate would break the royal icing down, but I do make royal icing decorations and put it onto a buttercream cake without them breaking down.

Any insight would be greatly appreciated.

My only concern is that the royal icing would dry very hard. I don't think I would want to bite into it on a pretzel. Doesn't sound to yummy to me. Why couldn't you just use a butter flavored buttercream using shortening only with butter flavoring and water instead of milk. I have a recipe that calls for 1 cup shortening, 1 teaspoon vanilla, 1 teaspoon butter flavoring, 1 tablespoon meringue powder 4 cups sifted confectioners sugar and 4 tablespoons of water. You could probably add a little corn syrup and water to thin to the drizzling consistency you are looking for.

Yes, royal will work fine for that. When I do my cake pops, I drizzle royal icing on top. It works great! icon_wink.gif

What are you dipping them in? I dont see why you are concerned about the white chocolate, if you are dipping the rest in regular chocolate...... Unless you are using dark chocolate. And if it is special nut free, can you not get nut free white?


Anyways.
I think the royal icing is fine for drizzling, the lines are too thin to worry about the hardness.

Thanks for all of your responses. I cannot find a white chocolate that is nut free and dairy free. The chocolate I use to dip the pretzels is a semi-sweet chip that fits all of the criteria. I usually just do sprinkles so it's never been a problem, but I want to do a drizzle this time. I also think that the very light drizzle won't be too hard.
