I wanted to do a cake for a raffle. Now, people are going to need a few days to see the cake and buy tickets, etc, right?

How long can the cake go between baking and giving it away for the raffle? Or, how many days could we hold the raffle for before we give the cake away?

I don't have the answer on how long you can keep a cake like that, but maybe you can make up a dummy cake and then whoever wins the cake you can bake and make one for them. That way it will be fresh and tasty. I know the dummy cake is(could be) a lot of extra work, but it will be a lot fresher that way. Just a thought!

I'm actually doing this for my mom's work. She works in a nursing home.

If you use a rich fruit cake and decorate it with fondant or royal icing it will get better the longer you keep it

Do you have a catolog of your cakes? I would suggest you place pictures of your cakes in a photo album and raffle off say a 1/4 to 1/2 sheet cake with the theme of the winners choice.

I've done several raffles at work-I usually do it the night before the raffle-they put it on a table or if there is a mobile cart it goes around and then they raffle it off that afternoon or the next morning-it's like doing a wedding cake as far as the time frame-just a couple days-but the idea of the dummy cake is wonderful!!! Especially if the winner wants the cake for a special occasion in a few weeks, etc....
