i'm new to this whole cake baking thing. does anyone have a good yummy recipe for a buttercream frosting? also a chocolate buttercream recipe too? one that is fluffy and i don't have to refrigerate. i usually use the Bettercream stuff that i get from Cash and Carry. It comes in a carton and i just whip it up. but is there something that i can make at home? Thanx!!

This recipe was made from trial and error. I made two mixtures of buttercream. One with salted butter which was too buttery (salty) and one with unsalted butter which was still too sweet. So I combined the two and it became the best buttercream Ive ever tasted. I use this recipe for all of my cake orders and it is a hit every time!!!
Buttercream Dream
Ingredients

* 1 stick butter (unsalted)
1 stick butter (salted)
1 cup shortening
2lb bag of confectioners sugar
3 teaspoons clear vanilla extract
5-6 tablespoons of milk (cold)

Instructions

Cream butter and shortening. Add clear vanilla extract then add confectioners sugar. Allow confectioners sugar to blend well then add milk. For thinner consistency, add more than 6 tablespoons of milk.

Hi , I prefer to use butter rather than shortening in my buttercream

The recipe as follows
9 oz unsalted butter , softened
1 lb 2 oz icing sugar , seived
1 tbsp vanilla extract

Beat softened butter for a couple of minutes until fluffy , beat in the icing sugar , slowley at first , add the vanilla extract and then beat in full speed until very light and fluffy

For chocolate buttercream

6 oz dark chocolate , brokrn in to peices
4.5 oz fresh cream
1 quantity of above buttercream

Put chocolate in to a bowl , bring cream to the boil, remove from heat and pour over chocolate

Stir until the ganache is smooth and glossy . Allow to cool , about 15 minutes

Beat in
to the buttercream . yummy
