Hi there everyone! I have a few questions for anyone that can answer. I just got an order for 800 mini cupcakes. How far in advance can I make then and how do I go about freezing them. I have never froze a cake before, just the batter, but I have no choice this time. Also, does anyone have any idea how many mini cupcakes the WASC cake recipe makes?
Sorry, but one more question. I have been doing tons of research on transporting this many cupcakes. Most all orders are about 200 or so. I have prices egg cartons and pizza boxes and cake boxes. I do not have al ot of storage room to store tons of boxes after this. Any ideas??

Jen, I would buy the aluminum pans with the lids (Dollar store) and you can store your already made cupcakes in these in the freezer and they are already package to go! When I do this I always wrap the whole pan in Saran before the freezer! HTH
A very popular mini cupcake shop here in town uses those plastic under-the-bed boxes. He gets a ton of cupcakes in those.

I use the under bed style boxes too because the cupcake does not come in contact with the box. Buy the biggest that will still lay flat in your vehicle. Layer them with the no-skid shelf liner and they won't move.
***CHECK THE BOX FOR PLASTIC SMELL BEFORE YOU BUY***
I learned the hard way. They aren't foodsafe and that smell will not wash out.
