Strawberry Nightmare!!!

Okay, so, I have made the Orange Dreamsicle cake with no problem and it was DELICIOUS!! I used the DH Orange cake mix (found it at Publix and at Ingles for those of you that can't ever find them). Anyway, my boyfriend's son was over today and we decided to try the same recipe using a Strawberry cake mix. The only problem was that I use the cake extender method in all of my cakes and for whatever reason grabbed the flour that sits in a canister on my counter. OH MY!! I had forgotten that it was SELF RISING!!! So, since I also use a little extra oil and a box of pudding in my mixes, I generally fill the pans (or in this case the cupcake liners and my silicon mini cake pans) 3/4 of the way full!! So about 20 minutes into baking I began REALLY smelling the cake! Then I smelled burning...
Yep! You guessed it!! strawberry cake batter all over my oven.
Once I gathered my thoughts and broke it to the 8 year old boy that he wasn't going to have cupcakes before he went home, I stood in my kitchen scraping out half cooked batter into a 9 in cake pan and now it is a globbed up looking mess!! The good news is, it tastes great!!

Whoops to the self rising flour mistake! I'm impressed that you could salvage the half baked batter from the cups and get it to bake right in one pan. thumbs_up.gif

Might not have been beautiful, but I doubt your boyfriend's son cared! icon_biggrin.gif
