How to work with Isomalt?

I'm making a aquarium cake for a friend next month and need to know how to start making coral. I read here and there that i should use isomalt but am clueless as how to start the process?? Where would i be able to purchase it ( i live in Canada) and how do i use it?? Any info would be great before i send endless hours searching through googleicon_wink.gificon_confused.gif
My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished 2 bags of M&M's and a chocolate cake. I feel better already.

I purchase it from Global Sugar Art. Isomalt is used just like sugar it is fairly simple to use. It is clearer than sugar and makes really pretty jewels. I believe to make coral you pour the isomalt over a bowl full of ice cubes, I think I saw Buddy do this (cake boss) or some other cake show. There are peeps on here that know a lot more than I do, somebody will no doubt give you more info. hth

Just remembered that you can cook Jolly Ranchers and use them too. I made some tasty stained glass window with them!

Hey Fellow Canuck! I live in Ontario and just love Flour Confections.ca to buy stuff from. They ship all over Canada AND most importantly sell Isomalt at decent prices! THey also are super fast so my orders arrive between 24-48 hours!!!!!

Their package has instructions right on it but essentially you add a little water to "wet" the isomalt. This speeds up the process and stressed me right out because NO WHERE could I find how much water. but the thing is the water will evaporate so it is fine. Just "wet" the isomalt and heat it up slowly. if there is LOTS of water it will evaporate, if there is barely water it will evaporate icon_wink.gif Good lucka nd happy online shopping. BUT BEWARE! That store is addictive!

Thank you all for your input! I found a few stores here in town so i wil check it out first before i start buying online (it's a small phobia). I have a picture that i have to work with so i will start playing around with it this weekend...yikes..getting nervous icon_surprised.gif

So i found a store in town that sells isomlat ($5 for a 16oz bag), went home and tried to make coral. Cooking process was super easy, the making of coral process...total failure! I poured it onto ice but the ice started melting so fast it created more fluid accumulation on the bottom of the bowl so i quickly stuck it into the freezer. Left it for at least 30 minutes, not long enough, but the isomalt did not freeze and in no way did it look like coral! Just a big gooey mess of sugar at the bottom of the bowl. Total dissapointment...so need to try again today but anybody have pointers on how to make this work?? Anything will help at this stageicon_wink.gif

If I remember correctly....
Cook your isomalt and when done stir drop dont stir in some royal icing. It will bubble and sizzle. then break it up into coral pieces when cooled. Hope that helps!

This won't work with Isomalt. Only with real sugar.
