I was asked to make a vanilla cake with a "light fluffy buttercream" that was not sour. Does anyone know of a good lemon buttercream? Can anyone help? Thanks!

i add lemon curd to swiss meringue buttercream that has a bit of vanilla in it for a smooth lemon bc.

Country Kitchen makes Lemon Icing Fruit..........mix that in with buttercream, Yum!

This is the recipe I use! It is super delicious, and I always get complements, it does crust if used on the outside of the cake, but the flavor is amazing! You will have to double, triple, or even quadruple the recipe if you need a lot! (0:

* 4 cups confectioners' sugar
* 1/2 cup butter, softened
* 2 tablespoons fresh lemon juice
* 1 teaspoon grated lemon zest
* 2 tablespoons milk

If I make the Smbc can I still cover it in fondants?

I use true lemon crystals, and add it to my regular buttercream until it tastes just right. Everyone loves it!

I just made the the SMBC last week with lemon curd and it was amazing! And yes, you can cover SMBC with fondant, just make sure your cake is nicely chilled so the icing is hardened
