I have been asked to make petit fours. I don't want to use poured fondant, I've had trouble with that in the past. I would like to use white chocolate. Which would work better just melting it and pouring it over and covering like cake balls or making candy clay and covering like fondant? My next question is if I use candy clay, can I make it with almond bark or do I need to purchase the candy disks?
Thanks so much!

Candy clay does not have the elasticity of fondant - covering little cakes would be very difficult unless you make a wrapped side piece and a separate top piece and tried to pinch the seams together. I have never made candy clay with almond bark, but it should work if you chop the bark into small pieces before melting. Don't know your time frame or budget, but Kathy Scott's petit four mold kits (her business name is Sweet Expressions) are what you need - absolutely gorgeous results.
