hi iam all new to this cake making business i have been asked to make a cake for my boyfriends sister for her 16th birthday i was just wondering how many days before can i start making it and still be ok to eat ?? xxx icon_smile.gif

Depends on what your making. (filling and buttercream or fondant) If your using buttercream, you can start 3 days in advance and refrigerate. If covered in fondant, that creates a better (seal) and will keep a couple of days longer. Just be careful of your fillings, don't use anything goupy, or you will end up with a mess. In the days before I started baking ahead and freezing, my schedule was bake on Thursday, ice and decorate on Friday, deliver on Saturday.

You can bake ahead and freeze the cakes .... wrap in saran wrap and store in freezer; to thaw, just leave them on the counter, still wrapped, until they thaw enough to work with. Depending on the size of the cakes, they will thaw in 10-30 minutes (they thaw MUCH faster than hamburger! icon_lol.gif ). If you freeze them, you can pull them out the morning that you are going to ice/decorate them.

I bake tues or wednesday , ice thursday , decorate Friday , Deliver Saturday.

I work mainly in mud cake covered in fondant though and I think they tastes better if it has had a few days to mature.
