Hi everyone, I'm having a bit of scratch head moment, I have a cake I need to make for a birthday and once it is delivered it will be taken for a trip, I'm just wondering if anyone knows how long a fondant covered cake will last before being served. I really dont want to say no to this client as they have gotten several cakes from me but I am concerned about the possible 2 days before serving. Please Help!

As long as you aren't using something that requires refrigeration, most cakes taste best on day 4 or 5 at room temperature, IMO. A cake covered in icing or fondant won't dry out, but because the moisture is being held in, it can start to grow mold in about two weeks. (some cakes might smell of mold or taste off at one week old, so I'd recommend refrigerating leftovers that you plan to eat before it's that old.)
