I don't want chocolate chips or the melting wafers (both readily available in bulk from many suppliers). I would like good quality chocolate in bulk to use for chocolate in baking recipes and in candy making. My supplier for the bakery (Best Brands/Bakemark) does not carry it. Can anyone suggest a supplier? thanks
I'm confused as to what's wrong with using the discs of good quality chocolate. They work just like regular blocks, but don't have to be chipped.
Sorry, I wasn't clear...the discs of chocolate would be fine...just not the discs that are designed only for coating candies. The store that carried these discs in my area is no longer open, and I am in need of another supplier.
I know you're located in the US, but this supplier is in Canada and looks to have very reasonable prices, and carries many other items as well. Just click the Chocolate and Cocoa link on the left.

You can also find some chocolate at Global Sugar Art.
You could also try http://worldwidechocolate.com I think the have baking chocolates on their site.
Do you have a Restaurant Supply store nearby? We have Restaurant Depot here. They sell Callebout Belgian Chocolate 10 pound blocks wholesale. In fact, our local grocery store sells the very same, only 3X the price because its retail.
Are you looking for a particular brand of chocolate? I use Sephra, both the chocolate and their candy melts. And you can't tell the difference in taste from their candy melts and anyone else's chocolate. It's really excellent, and their real chocolate is wonderful too. Just use that name plus dot com. They usually offer a 10% off discount for a first order, call and ask if you can't find it online.
