Total Newbie Question I Know - Cake/buttercream Combo

I have just gotten into cake decorating and am starting to get serious about it (even bought my Agbay, see?) but I am still completely stumped with some cake/BC flavor combos.

Anyway, I'm doing a child's little 6" square cake for Tuesday and they asked for chocolate cake with BC and bavarian cream filling but I'm not sure if chocolate cake should always have chocolate buttercream. I want it to taste perfect and I feel that those go together well but then I'm limited on kiddie designs (he wants stars) with the brown.

I could flavor the white buttercream I suppose (I've fallen in love with Indydebi's BC recipe) but I'm hoping to get some ideas or reassurance that I don't HAVE to have chocolate buttercream on a chocolate cake.

Actually the two most popular flavor combinations that I think of in cake is chocolate cake with white frosting and yellow cake with chocolate frosting. I really like my go to buttercream so I do tend to do a lot more with a white buttercream than a chocolate. One I'm still looking for the perfect chocolate frosting. I see no problem with a vanilla or vanilla almond buttercream, especially indeby's which I think has just a hint of marshmallow type flavor.

I would go w white bc with the chocolate cake as mentioned by PP. Unless requested the choco BC on choco cake can be really too sweet. Esp when throwing the bavarian cream! I love almond flavored BC. Not sure how that will taste with the bavarian but just my personal fav icon_smile.gif

I always want to know "Who MAKES these food rules?" that eveyone thinks we HAVE to follow?

- I put white icing on choc cake all the time.
- I DON'T eat cream cheese on a bagel (Blasphemy! icon_surprised.gif )
- I knew one guy who said "the rule" was ketchup on a hamburger and mustard on a hot dog and never the two shall mix!
- I don't put mint jelly on lamb.
- breakfast food CAN be eaten after noon.
- Non-breakfast food CAN be eaten before noon!

Now, this is all in fun, but seriously its one of my common rants that my family is pretty tired of hearing! icon_lol.gif But who makes the rules of what we HAVE to eat when and who decides HOW a food is to be prepared or eated?

It's a whole big world out there! Go wild! Put non-chocolate icing on that choc cake and watcht the excitement happen! thumbs_up.gificon_lol.gif

And i PREFER non breakfast food for breakfast and breakfast food for dinner. But the rest of my household thinks i'm nuts so it's usually a "treat" for me when i'm home alone.

I do think Choc. BC on a choc. cake is really rich and very sweet, but far be it from me to not eat it. icon_smile.gif But, I also agree, you can make any combination you or the customer wants. They are buying. What about a vanilla BC or maybe a caramel BC.
I have found my favorite choc. BC recipe from gourmetcakes..Crusting Chocolate fudge BC. I can barely stop eating it! Crusts really well and I do follow the recommmendation of using Hersey's cocoa. It really does provide the best flavor.

I always use white buttercream on chocolate cake unless the customer specifies that he wants chocolate buttercream. About 2 or 3 times in 15 years I have had a customer order a chocolate cake with chocolate filling and chocolate buttercream. For many people that is too rich and too, too much chocolate.

I almost always use a cookies and cream filling with my chocolate cakes for kids. Sometimes for adults, too. It's not super sophisticated, but everyone loves it, and it's super easy. If you'd like the recipe, just let me know!

indydebi post makes perfect sense. I use the white buttercream unless asked to do something different. Trust if they want something different they will tell you...I just got an order for a chocolate cake with strawberry cream cheese icing. I never suggested it She already knew what she wanted. So don't stress over it. Keep it Simple & don't over think it.
