Ack! I need to get my wisdoms yanked before my insurance runs out - the only day they could squeeze me in that is also on a day where hubby is home is a day before I have a cake due. Usually I do all cake decorating the day before its due - since I will be HEAVILY medicated, do you think I can finish up the cake on Thursday PM, stack it with bubble straws, etc - store in the fridge (its all buttercream) and have hubby deliver it on Saturday AM? Will it be ok? What about the cardboard cake boards - will they get too moist being stacked for that long? ACK!

Don't you cover your cake boards with some sort of plastic wrap? If so, I don't think they'd get soggy.

I think you'll be okay, I've made cakes two days ahead of time before (definately not my preference) and they've been fine, I always use naked cardboard circles too and maybe the above post has a point- if you're worried about the cardboard getting soggy-it may not hurt to wrap them in plastic....your post reminded me of a time I had a root canal done and then had to come to work and decorate cakes under the influence of oxy-contin...I was able to decorate okay but was incredibly slow and had to really think out every step icon_lol.gif My manager at the time was so worried that I was going to pass out from having to concentrate so hard!

It will be okay... you can make it a day and a half before it's due instead of the day before. You shouldn't need to refrigerate a buttercream cake, unless using perishable fillings.

They'll be fine... they are made for this purpose.

Actually, no - I did once after reading from some here on CC that they do indeed cover their boards - but it was nearly impossible to cut without pulling up the covering that I went back to what worked for me before. Perhaps this time I'll need to cover them though.

DH about died when I told him he'll have to deliver the stacked cake, lol!

I like to refrigerate if possible, it seems to keep things a little tighter. Where we live, our "room temperature" is warmer than most and he have next to no humidity so condensation has never been a problem.

Oh - I usually stack on site...I'm assuming to transport it stacked (its only 2 tier) I should use a center dowel?
