I'm looking for a really good lemon cake recipe. I thought about doing one like the WASC recipe only using a lemon cake mix but wasn't sure it would work. I would appreciate any suggestions.
Absolutely, you can do a lemon wasc.
The great thing about that recipe is you can interchange ingredients to make all different kinds of flavors.
You can use a lemon mix, if you didn't want to use sour cream you could use lemon yogurt. You could add a lemon pudding mix. Lemon extract instead of almond...etc.
I often make a lemon version of the wasc. Lemon cake mix, lemon extract (only half as much as the recipe calls for, otherwise it tastes fake) then about 7 or 8 packets of True Lemon (it's crystalized lemon). It's delicious, especially with raspberry filling and lemon buttercream (also made with the True Lemon.)
I am making Lemon WASC right now. I substitute lemon extract for the almond in the recipe and sometimes add lemon zest. I usually make a lemon flavored IMBC to go on top or cream cheese frosting. It is my husband's favorite and is soooo good.
