I have been making cakes for 30 years and never had problems with my cakes sticking to the pans until just lately. I tried the WASC cake recipe for the first time last week. For the first two cakes, I sprayed them with Bakers Joy spray. When I tried to get them out of the pans, they stuck and when they did come out, they tore on the bottom and sides, not alot but did not come clean out of the pans so the edges were all jagged and torn. The second ones, I used shortening and flour and they did the same thing when I took them out. I made a regular box cake that day also and it did not stick and edges were clean. I just made another homeade yellow cake, used the Bakers Joy and the cakes stuck and tore just like the WASC cakes did. Do all homeade cakes not come clean out of the pans or what could possibly be going on. It seemed like the edges and top of the cakes were wet and that might have been why they were sticking. The regular box cake seemed more dry on the edges.

Problems with cake stincking to the pans

I use homemade cake release, equal parts flour, shortening and veg oil. Mix it well and apply to your pans using a pastry brush. The only time I've had a cake stick is if the pans were still warm when I used then. My carrot cake requires I line the pan with parchment because the nuts and sugar sometimes cause it to stick.

I usually use bakers joy also but haven't had any problems sticking. But I do spray alot of it, probably to much but the cakes have never stuck. I usually have it running everywhere after spraying and then when I fill the pan with batter the spray kinda pools on the top edges but every cake I have made comes out beautiful.

i use the Wilton cake release, but it's the same thing as the homemade kind that everyone is mentioned and my scratch cakes NEVER stick, also make sure the pan is cool.
