Vent! Wants Last Minute Cake With New Recipes!?!

Thank you for letting me vent this off!
Nice, un-informed lady calls (tuesday morning) to my small home business:
"I'd like a cake for my Aunt's 96th Birthday"
Me: Oh, how nice! When is it for?
"This Saturday"
Me: Oh, I'm so sorry, I'm totally booked this weekend.
"You mean you can't fit in just a sheet cake?"
(Insert sound of my spine getting wiggly)
Me: Well, if I can deliver it on Friday...what flavor would you like?
"Spice cake with browned butter frosting"
Me:
Well that's not one of my regular flavors. Perhaps it's something I can work up, but I don't have time to experiment on such short notice. And I've never heard of browned butter frosting.
"Really?"
So the conversation goes on about trying other bakeries, and I suggest some. But the best part was this:
Me: I'm sorry but I wish you would have called me earlier
"I know but I was on the phone all morning!"
No sweet heart, I'm not talking about earlier this morning, I'm talking about earlier this month!
Sigh
Me: hobby baker/decorator who has committed to doing my first wedding cake for 150 people for a friend in June (as a gift to the bride). I have already started practicing each element of the 4-tier cake, experimenting with The Mat, stacking with SPS, and I'm even thinking of buying a $400 Cakesafe just so that I don't have nightmares for weeks ahead of time about the delivery, which will be about 30 minutes from my house. So, I mention to a different friend that I need to practice making big cakes and if she has any events coming up to keep it in mind, because I'm looking for opportunities to make big cakes (for free).
So, today I get this email from the second friend: "Is next Friday too soon for a cake for 150 people? A fund-raiser for my daughter's ski school. It doesn't have to be fancy - maybe have it look like a snowy forest or mountain cake and you can practice your layers! I would just have to be able to drive it (3 hours) to Vermont." (I think she would also have her dog in the back of the car with the cake -- and I don't own the Cakesafe yet!) I love her to death, but she honestly has absolutely no idea what would be involved in making a 4-tier, sculpted cake in the next 3 days that would withstand a 3-hour car trip with a dog in the back of an SUV. Cake muggles!
