I see cream cheese receipe here on the post, but I live in Florida , I have a wedding cake coming up and I am looking for a reciepe that is safe to sit out on the cake..I have a receipe , but the bride wants more of a cream cheese base.. I know with cream cheese you have to be careful and I won't touch a reciepe that can get someone sick, not worth it..
Of course the cake will be in a room temp of average 70-75 degrees at all times, including transport.. I always put my car air on 20 minutes before transport in the warmer months. This is a April wedding.. it will be in the fillings and it will be a light coating of it under my fondant, which I'd rather use chocolate ganache, but the bride doesn't like it..
So any ideas are greatly appreciated.. Happy cake decorating and thanks in advance
I agree with earlenescake.com I've left my cakes with cream cheese icing out for a week before and have never made anyone sick. There was a similar post about this topic not long ago and someone said that it was because of all the sugar in the icing that it could be left out.
I've been wanting to try this recipe. Does it crust like a plain buttercream so it can be iced smooth?

My Costco didn't sell anything from their bakery dept., but the Sam's would sell But-R-Creme and Rich's Bettercreme.

Ok, Earlenes cream cheese icing is not original or true cream cheese icing. It has sweetex,etc. added to it. I have made this. While it is pretty good, it is not true cream cheese icing. Designmeacake(edna) on this site has this recipe also. By adding the crisco, it makes it more sturdy to ice wedding cakes, etc. Earlene also uses the butavan emulsion. I used it also when i made her recipe. So there is no butter in hers, just the butavan, which she sells. hth Edna's does have the shortening, butter and cream cheese in her crusting one and the true cream cheese in her other recipe is the true cream cheese recipe. hth
