Smbc What Did I Do Wrong???

I made SMBC and it look like butter and tasted like butter. I think its not right and like to know what did I do wrong. I dont like too sweet and buttery icing. Like to find recipe for light and not too sweet icing. Whipped is not too stiff to do flowers. Please help!!! Thanks!

Did you use unsalted butter?

Also, did you use lots of flavoring?

Finally, piping with SMBC is tricky. It needs to be somewhat cool and if your hands are too warm, you will need to put the piping bag on ice or something to cool it back down.

I felt the same way first time I made it. Adding more flavoring is the key.

I'm not sure about adding salt. I used 1/2 unsalted butter and 1/2 salted butter for a recipe calling for all unsalted butter. Just personal preference, but the end result for me was a good icing.

I did use unsalted butter and plenty of vanilla I think 2 tsps maybe I did not whip it long

No. Do not add salt. Some people accidently use salted butter and that makes it taste like butter. The key is unsalted. icon_smile.gif

You probably just didn't add enough flavorings.

2 tsp is definitely not enough. I use roughly 1/4 cup of flavoring for a batch of SBMC. Try adding more vanilla, and see what happens.
