Chunky Pieces In Mmf?? Help!

Okay, I am totally confused. I have made MMF before (just once though) and it turned out perfectly fine.

Yesterday I went to make a batch (thankfully much in advance of when I need it so no disaster or anything icon_wink.gif) and it had all these little hard chunks in it! They looked kind of clear-ish, like big sugar crystals or something??

My icing sugar was sifted so it wasn't that.

So, I'm going to re-attempt but I would like to know if anyone has an explanation of why this happens, so I can avoid it! Or if there is any way of getting rid of them (besides going through and picking them all out - there were WAY too many!) that would be great too.

I tried searching this subject but couldn't find anything.. hopefully I am not the only person who has ever experienced this icon_razz.gif

This happened to me a few times, luckily it was practice stuff for the fam. I found that it was the dry bits of fondant that don't stick to the clump. I was emptying the whole bowl out to knead it and found out that it is best to not scrape the bowl. Just use the main clump. I hope this makes sense

I use a recipe from Edna Dela Cruz and the one posted here I think it is Michele's Fondant recipe both are good.

Thanks! That makes a lot of sense actually - the last time I made MMF I used the dough hooks on my hand mixer, this time I was just using a wooden spoon to stir it up and I was scraping the sides of the bowl a lot! Thanks I will bring out the mixer again this time around and hopefully I'll have better luck!

Yay! I tried again and used the mixer with the dough hooks. I melted the marshmallows in one bowl, mixed in icing sugar just till it formed a "clump", then I transferred to a greased bowl with a pile of icing sugar in it. Then I was able to mix the rest in until it was time to knead without an issue icon_smile.gif Not a single clumpy thing!

This happened to me once too. You could have started to burn some of the marshmellows (that's what I did!)
