What kind of oven do you guys have?

Hi everyone,
over the sudden opening my place is starting to look like a reality, but I have very limited knowledge of commercial appliances, specifically oven. Any of you can share with me of what you have and what I'm looking for when it comes to applinces, specifically ovens.

I have a blodgett double stack convection oven. i found it on Ebay for $800 (retails around $5k)

We are a pretty big bakery and also do bread. We have 2 ovens. One is a single rack oven and the other is a double rack oven. They take up a lot of space, but are worth it.

BTW, you can buy them used. The price tag is big!
They work well for cake baking because we can bake a whole racks at a time. I can only imagine the amount of time decorators spend baking without a large oven! We have also been in business for almost 23 years (in Feb). We are fortunate. icon_biggrin.gif

Hi Pebbles, I don't have any experience with these ovens, but I just remembered a thread here in CC. There's a person in that thread that sells ovens (including commercial, I think). She even puts in some email address in case you have questions. She seems very knowledgeable, so maybe you can ask her directly. Here's the thread.

I'd have to look up what we paid, I'm sure prices have gone up. I've had mine for at least a dozen years & love it as much today as when I got it. We looked at Blodget & Baker's something (maybe Baker's Pride? They were in New England & we went to actually bake off some cakes at their factory). Deluxe fits through a normal doorway (measure before you order) and it came in 1 or 3 phase. Never had a problem with the oven & it bakes so perfectly!
