Red Velvet WASC

Hi there- I know this subject has been addressed in the past and I did search for it, but couldn't find what I was looking for.
My question is - Can I use WASC recipe for Red Velvet? I'm starting with DH Red Velvet cake mix, can I omit almond flavoring all together and just use butter and vanilla? Should I use buttermilk for the liquid?
I've only made RV once before and it was from scratch. I just can't bring myself to dump all that red food coloring into another cake!

I would definitely omit the almond extract, put vanilla instead. I would use whole eggs instead of egg whites too. I am not sure about the buttermilk, though. Hopefully someone else will chime in on this. I LOVE red velvet so I hope there are more insights on this thread.

I have been meaning to try MacsMom's recipe for my next RV order, but subbing buttermilk for the coffee creamer...

Red Velvet Cake - MacsMom *If you don't have 100 mouths to feed, lol, just use 1 box white and measure out 1/2 of the chocolate cake mix, and obviously use half of all the other ingredients.
2 boxes white cake mix
1 box dark chocolate cake mix
2 pkg chocolate pudding
2 teaspoons salt
3 c flour
3 c sugar
3 c sour cream
3 cups vanilla coffee creamer
1 cup water
1/3 c oil
9 eggs
2 tablespoons butter flavoring
2 (1oz) jars Wilton red-red

I think I'm going to experiment and try it with the buttermilk in some cupcakes today.

I make red velvet wasc all the time and I love it! It's so much easier than making red velvet from scratch and is still sooo yummy! Here is my recipe:

1 Box DH Red Velvet Cake Mix
1 C all purpose flour
1 C white sugar
1 C sour cream
4 eggs
1 tsp vanilla
1/4 tsp salt
1-2 tsp unsweetened cocoa powder
1 1/3 C water

Mix well and bake! Sometimes I also add a small package of chocolate instant pudding, but not always. Either way, I get a great cake icon_smile.gif. HTH

I haven't tried one yet. I've been saving the various recipes posted on CC in hopes of trying one soon. Be sure to copy and past the recipe into a word document, the links I had saved had been removed and it was harder to find. If you would like me to post the recipes or links to the other recipes let me know. Maybe I will try to bake one or two for Valentine's Day.

I make my Red Velvet cake using the wasc method all the time, and my customers like it a lot! The only thing I have not tried yet is putting chocolate pudding in it, I will try and see what happens. Even w/o pudding cake is rich and dense, great for stacking too. Happy baking everyone! icon_biggrin.gif
