My brother in law is diabetic. I found a sugar free recipe for gingerbread cupcakes, but am challenged to find a sugar free icing. I am trying to stay away from sugar substitutes also. Any suggestions?

Whipping cream has no sugar and is popular for diabetics. Also mixing a small box of sugar free pudding with whipping cream makes an awesome mouse type frosting. I think the cheesecake or white choc puddings would be great with gingerbread.
