I saw this and was amazed by it

second pic on the link the first pic is from the blog I Am Baker and they show you how to make a heart inside a cake. the link shows you a christmas tree and when you slice it you see an ornament. if anybody knows what tip they used to decorate the outside of the green and white tree please let me know.

That is just too cool! You know it's funny, I've seen those kind of ruffles on the sides of a cake but I cannot for the life of me get mine to look the same! icon_confused.gif Anyway, thanks so much for sharing!!! icon_biggrin.gif

Yes, it's Swiss buttercream which is mostly butter. I'm talking about buttercream that's mostly powdered sugar & crusting.

DH2008, Yes! I have done this with regular shortening based, powdered sugar buttercream! Works fine!

Martha Stewart only makes Swiss Meringue Buttercream since she discovered it.

Melody at My Sweet and Saucy likes this other buttercream recipe:

This cake has been done a few times by a lot of bloggers, so you might want to google ruffle cake and see what buttercream they used. Or maybe you should try regular buttercream and let us know! I only make Italian, but I might make regular buttercream for the first time and try it on a tiny cake.

I am more interested in the construction of the outside of the cake...do you do the green trees first and start from the bottom with the green and the top with the white or from the bottom of both the white and green?

Thanks guys!! Sorry I didnt see this earlier to help out, but it looks like there are some amazingly smart women in here who know where to look and what advice to give. Thanks so much!

As far as the Christmas tree ruffles, I just started at the bottom and made graduating layers... for the triangle shape. Its it really easy to taper off at the top with that #103 tip... and if you mess up you can always wipe your slate (cake) clean and start over. Its really one of the MOST forgiving techniques I have ever done!

Amanda, your amazing cake directions are really appreciated. Please note that I am going to try this tomorrow on a cake. I am making two kinds of buttercream...the swiss meringue and good ol' buttercream...to see with which one I am most comfortable...do you have a preference?

Forgiving is what I like icon_smile.gif when it comes to decorating cakes!
