Bundt Cake Problems - A Little Undercooked In The Middle

I am working to perfect a bundt cake - it tastes great, but I am having a problem with baking time. My cake is nicely brown on the outside, baked almost all the way through, but still a little underbaked in the middle. I am afraid to bake it longer fearing the cake will get dry or overbaked.

I am using a very heavy bundt cake pan
Baking at 350 for 50-55 minutes
Testing with a skewer -- it appears clean

Any suggestions?

Since you're getting it down to a science here by making it over again--leave it in for about 50 mins then turn the oven temp down 25 degrees for 10 minutes and twice and see if it doesn't bake through. That extends the bake time by 15 minutes without grilling it too much.

Get an oven thermometer if you don't have one and keep watch on the internal temp too. Your oven may be too long between cycles (where it ramps back up to maintain temp). I mean you wanna be careful about wagging the door open too much too.

I also will loosely tent a piece of aluminum foil over a cake like this-- it seems to increase the heat plus I leave it on after it comes out--helps mine.
