Need Recipe And Advice On Making Pecan Turtles

Hi. I have some lovely caramel, Guittard dark chocolate A'peels, and whole pecans. I want to make some of those huge, fancy, custom-chocolate-shop pecan turtles for my dad and family for Christmas.
I'm hoping to make some that look like these:

Do I need to toast my pecans first? Any tips from you candy makers out there? How far in advance can I make them? Do I store at room temperature?
The caramel I will be using was recommended for caramel apples as well as chocolate candies. It is Midway's Finest Caramel Apple Dip

This is pretty much how I make mine, except I use Peter's caramel in a 5 lb block. You can cut it with a knife. I'm not familiar with the caramel that you mention or whether it is too soft if you don't want to actually dip the entire turtle in chocolate.
