Help! Merkens, Topsy Turvy, Ganache!

Hi all!

I'm in the middle of my first topsy turvy cake with the help of Sugar Shack's video! (LOVE HER!). I'm now to the part where we make the ganache. It's poor planning on my part, but the only chocolate I have is a 5lb bag of Merken's milk chocolate discs. From my research, it looks like they are 34% cocoa butter. So...will these be okay to use to make ganache to cover my topsy turvy cake? Will the ganache harden enough?

I used milk chocolate discs for ganache under fondant once and it worked fine.

And Sharon rocks!

I used 2 parts chocolate to 1 part cream. HTH!

with milk, you better use at LEAST 3:1 choc to cream and maybe even less cream than that. milke does not set up as firm, and merkens may make it even trickier.

I recommend Baker's semi sweet blocks from the grocery.

sugarshack, its 3 to 1 for milk? i used the semi sweet but my kids like the milk chocolate so i was thinking of trying the milk next time

HI I was wondering if anyone has tried the merkens milk choco. to make ganache yet. I saw that sugarshack said it was a 3 to 1 ratio but I just wanted to see if anyone has tried it and how it worked out. TIA

Technically it would not be ganache as ganache is chocolate and cream, candy discs are not chocolate. But that being said, it does work somewhat, though I didn't use Merkens but another brand.
