candy buffet

I would like to start offering Candy/Sweets Buffetts but I don't know where to start! My biggest questions is how to price it? I've looked online at different sites offering advise but it's still over my head!
Would anyone be willing to share what they've found works best?

have you looked at amy atlas? awesome blog and web site, maybe the sort of thing you are looking at?
wont help with pricing, but might help more with the business plan. its a lot of effort and man hours, it will definatly be a case of 'enquire for price'.
