AExcuuuuuuse me ladies, but I prefer the advice of people who obviously know what they are doing and have like, tv shows and stuff. Sandra Lee doesn't use supports, so why are you all suggesting all these dowels and sps and nonsense?

LMAO...That is why I removed the video at the advice from a concerned citizen. But it was MY cake!!! The only one that was gonna eat it was me or I would have been wearing gloves. Sounds like our Gov...except the smokes. They make you live in a cave if you smoke here...lol. But I don't need those anyhoo! And I would never leave my dingos behind.

And buttercup cake, I knew about dowel going through middle of the cake, I was trying to understand what exactly carrie meant (may be because i was very upset, my head was working bit slow!) Yes, I'm new to cake making ( compare to most more experienced in business) I think where I went wrong was, my both tiered cakes were quite high ( wanted to make a high cake like barrel cakes ) and support system wasn't quiet for it and hot weather didnt help. As I have made three tiered cake for another wedding ( which of course was a success) and many other 2 tier cakes. Yes, I feel terrible for the bride :"(

I learned the hard way from a leaning cake that if you make your tiers tall you need to put another cake board in there. Just had this talk yesterday with another member. Someone's wedding cake is not the time to be experimenting with a new technique (tall cakes) Out of curiosity, what is the brides reaction? Surely she asked for a refund of some type? As I said, I loved the design idea but maybe I wouldn't take any more wedding cake orders just yet until you have all of the basics down pat. Just being able to make a pretty cake isn't enough. I may never feel ready for wedding cakes and that is ok. I would rather be great at children's cakes than be an average wedding cake baker. I was not being mean when I said you are not ready for wedding cakes...just giving you my honest opinion..

When I do extended tiers (ie 6+inches) I always put a board in the middle (bit smaller than the actual cake diameter.  There are dowels placed in the base section of the extended tier - then the board then the top section is placed on top ...... outside of cake ganached and then the fondant is applied

This centre board serves 2 purposes

 

1.  It makes it so much easier when it comes to cutting/serving the cake - you can cut down your 3?inches untl you hit the board and then remove the board and cut the bottom section - so much easier than trying to serve slices that may be 6+inches high

2.  It helps to give your gave structure stability

 

If you are doing another tier on top you need to put another set of dowels in to support the top tier.

 

I would normally use a central dowel method with an extended tier - not for extra support for the tiers - but more because any structure that is taller than it is wide has the potential to topple - also a reason for having a larger presentation board.

In Australia, we do our central doweling different to those in the US - we would pre-drill our boards - drill and glue the dowel into the base board and then thread the cakes OVER the dowel.  The boards we use are not able to be pierced easily with a hammer, so the hammer the central dowel through all layers that is often suggested on here does not work for us.

 

So pleased you came back and are interested in learning how to prevent this situation occuring again.

AI've so glad to find somewhere I can discuss and get advise from more expericanced in the field. You are right buttercup cake, shouldn't have experimented on her weddding cake. I will try barrel cake at home and will upload pictures. I need another advise, I assume some of you work from home? I need to change my insurance cover, I only have public liablity cover but I think it's not enough in cake making ( food category) which one do you have? Or if you don't have any?

OK, first off you will need a separate business insurance policy. That will protect you from liability if someone were to fall ill due to your product. Mine is only $425 a year for $2M. Also what do your local cottage food laws say about baking from home? I am not allowed in my city so I must rent a commercial kitchen. As for our homeowners policy you need to check to see if they allow home businesses under your current policy. That is an excellent question that I would have never thought of. I havenever seen it addressed before. Maybe Jason would have some insight. He seems to be our local source of info on this type of stuff.

Looks like driver & passenger error, to me. The best stacking system in the world isn't going to help if some numb-skull is holding the cake on their lap and the driver slams on the breaks to avoid a kittie in the road...There are clearly 2 hand prints on the top tier. I can see them both screaming "OH S***!!!!" while cranking the wheel, and grabbing the cake. 

 

Pam, do you have a link you can share so we cam see what your boards look like? It sounds like such a great method! I would love more details!! Far superior to the SPS we all hear so much about!

I think you have jumped to the WRONG assumption.....  we have already ascertained that the cake construction WAS the problem - please, please, please DO NOT start passing the buck on the blame game.

 

It doesn't help anyone - OP  is FINE -  she has come back and is keen t learn so it won't happen again.   Let's not start saying....  oh you did everything right -it was the driver/passenger's fault.  Naureenk, this is no slur on you - I just don't want you to get confusing information

 

Look,  I don't want it to sound like I am having a war with YOU Batterup - but seriously I see you jumping in to give advice more and more and more often than not it is unsolicited advice.  You are giving advice on things you don't have expereince on.  It's great than you are an eager beaver and by the keyboard ready to help - I am sure people appreciate that and I for one don't want to see you stop .  What you need to do is offer advice on subjects that you are proficient in or at least don't jump in and try and deflect when good advice is given - if you don't do wedding cakes and have had cakes collapse...... then perhaps you should not hold yourself up as the 'be all and end all' of advice.

 

Yes, I pointed out two handprints on the top tier ..........  but MY opinion is that the poor passenger was sitting there watching the cake start to 'go' and grabbed it hoping they might SAVE it.

As for the boards I use - Google STD cake boards - that what I use for under cakes and internally - If it were a large cake or a carved cake I would use MDF boards.
All my presentation boards are MDF - 10mm for the larger, tiered, heavier cakes
