I Need An Egg Substitute For Rolled Sugar Cookies.

Sorry if this has already been discussed. I searched and there were 473 pages of threads to go through. I scanned for awhile but had to stop when my eyes got tired.

My daughter's best friend is allergic to eggs so I can't use my regular receipe (I'm using the modified NFSC receipe which my family and friends love). I tried using applesauce, baking powder, oil and water like I would a cake but they spread soooo much - tripled in width. Does anyone have an idea of what I could use as a substitute so that the cookies would keep their shape?

There is a product called EnerG Egg Replacer made specifically for baking. You can find it at places like Whole Foods, Sprouts, any of the more "natural" grocery stores.

This is actually a recipe for Spritz Cookies. Not sure if you could roll these out and cut them with cookie cutters, but for what it's worth.......

1 8 oz. pkg cream cheese, softened
1 cup salted butter, softened
1 cup granulated sugar
2 tstp vanilla extract or flavor of choice
2 cups flour

Combine cheese, butter, sugar and vanilla until light and fluffy
Add flour gradually till combined.

Bake at 350 degrees for 10-12 minutes or until slightly brown on edges.


These work fabulous in a cookie press. Maybe you could roll into balls, and flatten with a glass dipped in sugar and decorate any way you'd like! icon_smile.gif
