I am making a cake for someone who says their favourite flavour is lemon and coconut (seriously? can't imagine it!). I have a really nice lemon recipe where the only liquid is sour cream. Would I substitute some of that for coconut cream perhaps?

Also, any suggestings for filling? buttercream with coconut cream for the liquid?

Hi, are you making smbc, itmb or regular b/c with powder sugar. either would be great with pure coconut flavoring added or can of cream of coconut added. I would just make your regular lemon cake. with whatever way you make your icing. A lemon curd filling would be great also. Raspberry filling would be great with this combination also. but don,t know if she want that. you could ask. hth
