Royal Icing Questions For 200 Cookies

Hi,

I have to flood 200 2" cookies and pipe an 'M" on them. How many batches of Antonia74's royal icing would I need to flood 200 cookies? For the 'M", I would probably need one batch because it is only one letter, right?.

My next question is about color: the icing needs to be khaki green - I can achieve this with forest green mixed with egg yellow (I experimented with a small batch). How many bottles of each should I buy?

The "M" is going to be dark brown. I have one bottle of dark brown, would that be enough to achieve a dark brown in one batch of icing?

I am so nervous aboiut this as it is such a big quantity!

I use 1 lb sugar in my royal.. and I think It takes about 5x batch for 15 dz cookies..I can't exactly remember because I usually have Extra RI on hand..Antonia's batch is 2 + lb of sugar, so maybe 3 batches to be safe. I might just do 2 and do another later if needed, especially since your just flooding whole cookie one color then piping the "M". At least your putting a dk color on a semi dk color, less risk of color running. You shouldn't need more than a bottle of coloring, unless it's a really dark shade you're going for. Sorry I can't be exact on the amounts. I usually have extra of everything around me.

It's not that bad..just do one step at a time.. It's rewarding in the end to see them all .

I just did 18doz (216 total) 1" cookies with 1 batch of Antonia's royal icing plus some left over from another batch. Personally i would probably make up three batches (2 in your khaki green color) and then leave one white to color as needed for the letter.

You'll have some left over but i'd rather have some left over than have to stop and make some in the middle of decorating.

As for colors.... i don't know how much to order, i would imagine one of each would be enough, but as mentioned above it alld epends on how dark you're looking for. Again, personally i would get 2 of each, color doesn't go bad and i can always use it later. I'm also assuming these are the really small bottles of americolor you're talking about, if you're looking at the bigger ones then one of each will be more than enough.

Thank you both for replying! I am a little stressed about this being a hobby baker who is doing this for charity.

So I will tint 2 batches the color I want and then leave one batch white for the 'M'.

Yes, I am using the Americolor gel colors.

I don't know for the quantity, but use a stencil for your M.. It will look nicer and more uniform icon_smile.gif And It will be so much faster!

And for the M, when using a stencil, I'm sure you won't need a whole batch of royal icing!
