After seeing the wonderful designs on this sight I've decided I'd like to branch out and do some more sculpted cakes. My question is how do you begin charging for these? By the time you trim, you end up with a lot less cake, but also spend a LOT more time making them. I already have a price list for your typical sheet cakes. thanks!

i charge by difficulty, and by estimating the time involved with decorating. Now of course i usually take a beating on a first time design, but live and learn.

I would imagine, too, that just because you cut some of that cake off doesn't mean you shouldn't charge for everything that went into baking the cake. You still have to make it that way and you shouldn't have to take a hit just because you may need to cut some of it off.
