Hi.. I am planning to make Ganache in fancy jars as gifts for Christmas.
How soon can I start making them?
I'd appreciate any helpful hints on this as well. Thanks sooo much!

I've never frozen ganache just regfridgerated it for a few weeks at a time but you could make a batch to experiment with freeze half in a jar and refridgerate half in a jar then thaw in a month and see if you taste any difference.

Yes, you can freeze ganache. I've never frozen it this long..but I've heard it can go about six months. Just wrap it carefully to prevent freezerburn and such.
