Urgently Need Cake Recipe With No Eggs.

I am in urgent need of a cake recipe with no eggs. I normally use the WASC recipe, but have a customer that wants no eggs. Does anyone have a recipe that is similar to the WASC that can be made with no eggs.
They are vegetarian and won't eat eggs. Would egg substitute be wrong? Not familiar with what is ok and what is not, because I personally will eat about anything. LOL icon_lol.gif

Sorry for the urgency, but the people just ordered the cake and it is for tomorrow. Any help will be very appreciated. thumbs_up.gif

Just google for vegan cakes or cupcakes. They will work for what you need.

As an FYI, I've had good results with this product http://www.ener-g.com/ - I buy it from Wholefoods.

Thanks snowshoe1. That may be something that I need to keep in stock for future use. Does it come in powder form? What is the shelf life of it? Sry for so many questions, just not familiar.

Just an FYI, a good subsitute for an egg is 1 Tablespoon Soy Flour and 1 Tablespoon water.

If you google wacky cake you will find a few eggless cake recipe. I had one but unable to find to post for you. Hope that helps.

It is in powder form. I keep it in an airtight container and it lasts for months. Its about as expensive as using an egg.

I have had recent success with a recipe I found on allrecipes.com. It's titled Egg-Free Dairy-Free Nut-Free Cake, I'll post the recipe here as I made a few changes, yet the recipe is moist and incredible. I created a dairy free "buttercream" to go with this recipe.

EF DF White Cake

1 1/2 Cups All Purpose Flour
1 1/2 Cups Cake Flour
1 tsp salt
2 tsp baking soda
1/2 Cup + 2 TBSP vegetable oil
2 TBSP White Vinegar
2 tsp vanilla extract
1 tsp butter extract
2 cups cold water

Oven 350
Yield 3 8" layers with approx 2 cups batter each
1. In large bowl, combine, flour, salt, sugar, and baking soda. Mix well, then stir in oil, vinegar, and extracts. When dry ingredients are will moistened stir in cold water and stir until batter is smooth.
Pour into prepared pans and bake 30 to 35 minutes until toothpick inserted in center comes out clean.

I gave this cake and it's frosting out as samples to my customers and they all said they could not tell it was EF DF.... Enjoy!

The above recipe is just like the vegan recipes I have found. In vegan recipes vinegar is used as a leavener rather then baking powder or soda.

Hi Gavriela, I just printed this recipe and am mixing per your instructions above, but I noticed that the ingredients didn't list sugar but in the instructions it says to mix sugar! How much sugar is needed??? I literally just stopped mixing... from websites I think 1 cup is appropriate but since you modified the recipes I can't find an exact match and am lost. Help!

1 cup sugar is correct.
