I have an order for a topsy turvy cake to feed 50pp. I would like to do 3 tiers. What size pans should I use. I know there is waste and I want to be generous with the servings.

The smallest top tier I would work with is 6" as it is so hard to cover anything smaller although it can be done (I just prefer not too.) That being said you will want 3" difference for each tier for the right "look". So your tiers would be about 6" at about 8 servings, 9" about 22 servings and 12" about 45 servings with three carved layers. And that is just too much cake!

If it were me, I would either A.) use a dummy filler or B.) go with two tiers 8" for about 15 and 11" for about 35. My prefered choice is B as you can add wonderful decorations and everyone would rave. HTH

I agree with Tip top having just made one that had a 4" on top. It was a big challenge.
