Can I Start Working Tonight For Next Week's Party?

Hi,

I need some cookie advice. I will be making cookie pops favors for my nieces baby shower next Saturday. Since I will also be making the cake too I am trying to do as much in advance as possible. I have looked at some of the post and see the dough can be made weeks ahead of time and put in the freezer.

My question is tonight can I not only make the dough but cut the cookies, insert the sticks and wrap them with saran wrap and put the tray in a plastic bag and put it in the freezer? If I take them out on Wednesday to bake so I can decorate on Thursday will they still be fresh for the party? I will be using both fondant & royal icing to cover the cookies. How long do I have to leave them out on Wednesday before I can bake?

I don't do pops, but I do cookies. You can cut them out and freeze them. I bake them straight out of Freezer. Baking Wednesday would be fine for Sat.

I actually baked my roll out cookies that I did for my best friend's bridal shower that's on Saturday. I got them out yesterday and thawed them and decorated them and they taste just as fresh as if I'd made them yesterday. I'm not sure about cake pops, but I also froze the cakes for her shower too and will be pulling those out tonight so I can decorate tomorrow.
